Happened to me, solved it by changing my PHP version

Mines on 7.3.27, which is the recommended min. Tried rolling back to previous PHP but gave error message saying needs 7.3.27....

adding images to activity feed works fine, just not saving the profile avatar or cover image for some reason...

Try 7.4

files are being added to sql/user
also being uploaded to files/public/uploads/avatar or cover,
so the upload function is working, but not being linked up to front end for some reason after upload

dont have 7.4 on my server ...

Check if you have the correct URL in the storage url in the admin panel

Was still set to local host!
