How do you keep your plugins organized?

Hi guys,

I was just wondering what ways are you using to keep your plugins organized through various sites?
For example I have 4 sites that I'm administering right now and it's becoming increasingly difficult to keep track of which site uses which plugin. Add the PHP7 PHP8 requirements and I know that at some point it will become hectic.

I was thinking of creating a simple Excel file but I was curious if someone has come up with a better solution

Have you tried it? A friend gave it a go a while back and it ruined his site during a plugin update. I'm not even sure if I trust it enough to test it
I was tried when they newly released and there was not a lot add-ons. Btw they are still developing continuously. If I were you I just use for "monitoring" client's website not update in one dashboard.
