If you have a cpanel, you should be able to set php version for each domain specific, without causing issue with your other sites that are php dependent.

I cant. all other apps on my server using php 7.3 will fall.

I dont know what kind of what sorcery is happening. but I have installed it agin on my server running php7.3 maybe merlin on my webhost is doing sorcery stuffs again.
